Moving customer site but not DNS MX

We're moving a client's site to our servers but we won't be handling their email (MX record). Is it possible for the current ISP to simply re-route their DNS A name setting to the new IP and leave the MX record as is?

Will we have to do anything on our end with the MX record or just not even have an MX entry?


Also, will there be any downtime with a DNS change such as this, mainly with their email? Hopefully not since the MX record stays the same.
