RAID 5 vs. RAID 10

I plan to build a server built around the Tyan Thunder K7X motherboard, Adaptec SCSI RAID 2000S controller, and five Maxtor 18Gb Atlus 10K III Ultra160 hard drives.

Questions:

1.) How well does the 2000S controller perform? If I drop down to the Tiger K7X, cheap video card, around $400 SCSI controller (Intel or Adaptec), and a AGP/64bit PCI riser for my chassis my overall price for the server stays the same. I lose a NIC with the Tiger choice but I doubt that will matter.

2.) How well do the Maxtor drives perform? Good price at around $95 but is it a good drive?

3.) Which is a better choice in terms of performance: RAID 5 with four hard drives or RAID 10 with four drives? Redundancy is important as well. The fifth drive will be a hotspare.

The server will serve MySQL databases and php pages.
