Moving an e-commerce site

I'm going to be moving an e-commerce site from one host to another. I have the SSL setup on the new server and everything else ready to go (I think).

My question is, what are some of the best steps to avoid getting e-commerce orders on two different servers as the DNS propagates?

I'd hate to shut the existing site down or something where the domain won't respond for those few days until the DNS is updated. But at the same time, having orders come in on both servers during those days will be a nightmare.

Is there a trick to this like having the existing host change the A record or something along with the Network Solutions DNS change? I'm not sure the existing host would cooperate though.

Any thoughts or ideas? Are there other pitfalls I should be aware of?
