Game Server OS optimizations

I always see people and companies say that they optimize the os usually linux for game server however in my experiance working for 3 other game server companies I have never seen this happen or have had any problems.

Just wondering if anyone had an idea what these special optimizations were. Or if in fact they are all marketing hype I spent hours googling heh Game Server OS optimizations
