MailServer questions

Hi

I am trying to set up a dedicated mail server that will be used by my cpanel hosting servers. I also want to be able to use one of the CPanel servers as a backup mailserver.

Is it simply a case of setting up a 'mail' mx on each cpanel server to point to the mail server and a 'backup' mx to point to the backup mailserver?

If this is the case how does the stored mail get from the backup mailserver to the main mailserver when the main mailserver is back up?
