SendMail for backup MX

Hello,

I want to use Sendmail to configure my server to be a backup solution for my main mail server which is located on another server. I have already tested it out by adding the domain to the list for allowed relaying and setting the MX record with a higher priority number to be my domain w/ Sendmail.

It appears to be working properly, I turned off my main mail server and sent myself an email. Then I turned it back on and I still got the message!; however in the header it said that the message had been recieved by sendmail/my rackshack server about 10 times... meaning it tried to connect to the original mail server 10 times and could not so went to secondary in the time I had the server off (like 20 seconds)... So my question is,
how do I configure sendmail to hold the messages longer before attemtpting to relay them?

I want to hold them for about 10 minutes ... I couldnt find anywhere in ensim to do this, is it possible?
Also, I am fairly new to linux and hosting, but i remember when I first signed up with rackshack I noticed some alerts about patching sendmail, how do I verify that it is pathced currectly for all known vulnerbilites?

It just doesnt make a whole lot of sense to me ... can someone help me out with regards to what commands I should type in from SSH?
