Setting Up New Dedicated Server Questions

Hello,

I'm setting up a new dedicated server and am interested in your suggestions on how best to initially configure it for speed and security.

The system I will be garnering will be running Linux ES 3.0 and Apache. Perl and MySQL will be installed. It will be used for a small number of Web sites (no more than 10). Most of these Web sites are static, but a couple are E-Commerce Web sites. As such, two SSL certifications unique to each domain will be installed.

I will turn Telnet off and allow only SSH2 to run. I will also turn FTP off and simply write a shell script to turn it on and off at the Shell command when I need it.

Are there specific ports I should turn off that I don't need, such as IRC?

Are there other modifications I should make to improve security?
