how to setting 1 domain separate web hosting and email hosting??

i have a domain and want to separate it's web and email hosting with other hosting company, i want to host web to other hosting while for email hosting will be hosted on my vps at dinix.

how to setup this to work? i know i must setup MX record etc. but i still don't have any clue to do it, can you give me a step by step how to do it?

what ns record should this domain name have?
ns1.myhosting.com and ns1.otherhosting.com?

how to set all incoming mail to clientdomain.com will be sent to myhosting.com server while all http request served by otherhosting.com?

how to set mail.clientdomain.com so if i pop3, i will access myhosting.com server?
