Ensim Pro : Pay to solve email problem

Not sure if anyone can help me, however I'm more than willing to pay if someone can.

Firstly, I'm running Ensim Pro 4.0.0-14 on Redhat. I'm currently hosting about 115 sites. My main issue revolves around failed email not going back to site admins, but instead coming to root.

The main ones that come to me relate to standard bounce backs: User & Host unknown, No such user, Exceeds mailbox storage quota etc.

I wish to have this fixed so that all current and future clients have any emails of the like get sent back to the site admin and not root.

Firstly can this be done and if so, can someone do this for me? Please respond and advise of costs etc.
