transfer email account to another server

i need to let the all mails of a domain to be working from another server other than the main one,

i created a hosting account on the other server (only to serve mails) and i changed the mx record on the dns server and it works ok it (sends and reveive OK)

the question is , From where do i get the old emails on the old server to copy them to the new server.

where are mail messages stored ??
