Removing eggdrop and securing the server

Recently I have found that this program was installed into some of my servers and that these are commonly to issue DoS atacks on networks by Hackers or Criminal Organsations.
I have read the eggdrop website but they only gave instructions on installing....
Research on the web gave me this site

but then the commands look more like it was installing something than uninstalling something.
Checking on the server I have found that the main program was installed in my /tmp folder which I have already removed.
My Question is that do anyone know how to disable or uninstall this device? Also if its not possible or would it be simplier to disable over a hardware firewall the ports that this device use to access or do attacks OR stop it from recieving the "attack" command.

Would there be a way for me to use some common tools to test the security of my server or if my firewalls are secure enough? I know only very limited ways to testing.
( eg. Attacks on Port 139, Telnet exploits, password cracking etc )
