How to find out if someone is relaying mail off of a server?

We have a server using WHM/CPanel with Exim. How can you tell, (ie.. what do you look for in the logs) if someone is relaying mail off of your server without an account on the server?

We have a large volume of mail leaving our server, but don't know how to determine if there are unauthorized users sending the mail. What you you need to look for in the log files?
