Novice needs nameserver help for cpanel servers

OK, so I had been setting up my namservers both on the same server. Like

ns1.anrhost.com = 209.59.180.229
ns1.anrhost.com = 209.59.180.230

Both IPs are on My server #1.

Now I read up, and everyone's talking about "you need both at seperate physical locations" even though the way I have them setup has worked FLAWLESSLY for a year. I guess my question is, when I get a second server, how will I go about setting up the nameservers so that ns2.anrhost.com is on server 2 but points to accounts on server 1...
