Questions on new dedicated server and hostname

I am signing up for a new dedicated server (windows os) and have questions on the FQDN/hostname.

1) Currently the hostname that I want to use is hosted elsewhere. It is registered at dotster and I manage the dns.

2) I want to start, test and implement the new server while leaving the hosting for the FQDN somewhere else. Possbily for several months while a new site is written.

3) The new server will host subdomains of the FQDN immediately:

http://www.xyzcompany.com - currently hosted elsewhere, but will be the FQDN of the new dedicated server and ultimately moved to it

https://store1.xyzcompany.com - subdomain
https://store2.xyzcompany.com - subdomain
etc...

4) I am going to use a wildcard ssl cert, so I don't want to start the server under a temporary name and then change it.

3) Is this possible? As long as DNS still points www.xyzcompany.com to the existing hosting, will it matter that I also use that as the hostname for the new server?

Is the hostname of a dedicated server always www.xyzcompany.com or can/should it be named something like server1.xyzcompany.com?

4) Any other issues with this config?
