How to conceal server type?

Hope one of you very wise people can tell me how to do this.

In the whois searches, it shows all my server info under the "Server Type" listing.

For example...

http://whois.sc/mydomain.com (not my domain, but an example) shows:
Apache/2.0.49 (Unix) mod_ssl/2.0.49 OpenSSL/0.9.6b PHP/4.3.6

Some other domains I've seen don't show this. For instance...
http://whois.sc/whatever.com shows: Apache/1.3.27 (Unix)

I also saw one domain that said: NYOB (lol)

How do I go about changing this myself on my server so that it displays only what I want it to show? For instance, "NYOB" or just "Unix" or even just "Apache".

Also, is there any reason I wouldn't want to do this?
