Easiest way to Clean up and Back up a server...

Hi guys,
I've been pretty scarce around here for a while, heh, lost all my 1337 dedicated server administative knowledge.

What is the easiest way to CLEAN up, and then BACKUP a server with 300+ websites/domain names?

MY server is cpanel, and there is a 80 gb hard drive, i think 58 gigs are being used up but I am SURE that most of that is LOGS and crap like that, these sites are small for the most part and should be like 10-15 gigs max I think.

How can I clean out all the ANY kind of logs the easist, and then backup ALL my settings (1. to my local pc) and then (2. to a fresh faster cpanel server).

I have kinda lost my groove in this thing, been so inactive for some time now, hopefully I can do this easily Easiest way to Clean up and Back up a server...

I have a few CUSTOM things I need to worry about when moving.

1.) I have all my domains setup as wildcarded in httpd.conf and also in /var/named/sites.com.db. I also have wildcarded /etc/valiases/ for mail entries.

Yea that's about it as far as custom, aside from that I am concerned on setting up my new server security wise but I'm sure I'll figure that out when I get it soon.

PS: There are folders that are generated by default cpanel when I setup a domain, like _vti and all those, how can I wipe ALL of those folders from my server easily? Also, how can I wipe any error_log files that may be in the domain's as well (those I do not care to backup honestly).
