Capture incoming and outgoing mails

I have a VPS with cpanel running OK, but one of my client want to "capture" all incoming and outgoing mail's and send them to another mail account (in the same or diferent domain).

It's only a backup reason, they already lost a notebook and that user lost all his mails.

It is posible with Cpanel (Exim as mailserver).

Please detail all, because I'm nearly new
