Simplest way to handle email

I'm developing a web hosting package that will automatically build my clients' websites based off templates. It will also automatically purchase a domain for them.

Since I'm hosting their domain, I feel like I will also need to offer them some sort of email service that can make use of their domain name.

What are my options for offering the simplest form of email? Just email forwarding? POP? Or can I farm email handling out to someone else even though I'm hosting the domain?

I'm open to any ideas and directions at this point.
