Questions about setting up mail servers, uploading sites/viewing them

Hello,

Just trying to play around with my VPS with cpanel/WHM and needed some advice:

1. How do I set up the mail servers for operation (incoming and outgoing)?

2. Once I create the accounts in WHM, how do I view them before I make the DNS changes to the domain name (they all share an IP)?
