How to change MySQL Charset?

Hello,

In my PhpMyAdmin, it default set the MySQL Charset to UTF8!!
So when I choose to change the Languages, it only shows everything in UTF8.

I want to set it to ZHTW-BIG5 instead of UTF8.

How could I do that to change the MySQL Charset?

Phpmyadmin 2.6.4-pl2
