How it works - Pointing to Data Center Name Servers

Hi,

I have found many use Name servers of the Data centers to host domain name on a dedicated server. That is if i have a server in ThePlanet, i use ns1/ns2.theplanet.com to host sites on that server. How this works ?

Today a client brought server from webhostplus, he is asked to use

In order to use our DNS servers, please forward your domains to
ns1.webhostplus.net[66.111.229.36] and ns2.webhostplus.net[66.111.250.180]
How can name servers running in ns1.webhostplus.net or ns2.webhostplus.net knows the site is hosted on a server on the network and resolve it properly ? In order to resolve a domain, the domain should point to a name srever that have the zone files of the domain ?
